  • 1 ripe banana frozen
  • 1 cup passion fruit pulp
  • 1 cup heapingstrawberries hulled
  • 2/3 cup plant milk unsweetened
  • 2 medjool dates or to taste pitted
  • 1 tbsp beets

It’s vibrant, slightly tart, subtly sweet, energizing, summery, pink(ish) perfection. To make it, you’ll combine about 1 cup of thawed frozen or fresh passion fruit pulp with 1 frozen banana, hulled strawberries, a hearty splash of unsweetened plant milk, a date or two (to balance the tart passion fruit), and a tablespoon of diced beets (completely optional for color). Blend it on high until completely smooth, pour it into a glass, garnish, and drink it up. This has been my most frequented smoothie over the last two weeks, and I don’t see my obsession coming to an end anytime soon. Guilt-free Lavender Almond Butter Cups

A tall stack of creamy, meltable almond decadence all dressed up in lavender and hibiscus petals. These little darlings are wearing their fancy clothes today. Plus, their purple and pink hues take these almond butter cups from drab to fab, and they boast a handful of health benefits, including improved circulation, reduced anxiety, and cholesterol maintenance.

To be totally honest, these almond butter cups aren’t made with white chocolate at all. Nope, not even an ounce. They’re made with coconut butter which, let’s be honest, is basically white chocolate’s plant-based sister. Coconut butter is aligned with white chocolate on many fronts: texture, richness, creaminess, and meltability.

These super quick and easy almond butter cups contain just four ingredients (not counting the garnishes), and they are so good. Coconut butter is carefully melted over the stove and a few dashes of coconut sugar are stirred in to add a touch of sweetness. Thin layers of coconut butter are poured into muffin tins and popped into the freezer to set. Next, a layer of almond butter and maple syrup is gently spread over top, and the nut butter cups are finished with one more layer of coconut butter. Frozen bananas, frozen pineapple, chilled coconut milk, lots of fresh lemon juice, maple syrup, vanilla, and a dash of turmeric (for color) are churned to cool and creamy perfection in a food processor. The bananas add a frosty quality while the coconut milk lends richness and a whipped, airy quality. But don’t worry about it tasting like bananas, the fresh lemon juice weaves itself throughout and offers a bright, citrusy tang. Frozen pineapple teams up with the lemon juice to cut through the creaminess, lending both a pale yellow hue and a light, refreshing acidity.
